Kelewele-A Popular Ghanaian Street Snack

Kelewele (spiced plantains) with roasted Spanish peanuts

Ingredients

3 large very yellow plantains

1 habanero or chili of choice

Fresh inch and half of ginger and 3 garlic cloves

1 small red onion

Adobo to taste

Oil

Guidelines

| PREP | 10-15 MIN

Rinse & Peel ginger and garlic and onion

Mince garlic, onion and ginger

Blend habanero

Peel plantains and cut in diamond shapes

Throw all ingredients in a bowl and toss

Let sit for about 15 minutes

Pour about 4 cups of oil into a saucepan and heat to about 375 degrees (or use a deep fryer)

Fry the plantains until a golden brown

Remove from oil and use a paper towel to soak up the excess oil

Enjoy with peanuts
