Kelewele - A Popular Ghanaian Street Snack

Kelewele (spiced plantains) with roasted Spanish peanuts

Ingredients

  • 3 large very yellow plantains

  • 1 habanero or chili of choice

  • Fresh inch and half of ginger and 3 garlic cloves

  • 1 small red onion

  • Adobo to taste

  • Oil

Guidelines

PREP | 10-15 MIN

Rinse & Peel ginger and garlic and onion

Mince garlic, onion and ginger

Blend habanero

Peel plantains and cut in diamond shapes

MAIN AFFAIR PART 1 | 10 MIN

Throw all ingredients in a bowl and toss

Let sit for about 15 minutes

MAIN AFFAIR PART 2 | 20 MIN

Pour about 4 cups of oil into a saucepan and heat to about 375 degrees (or use a deep fryer)

Fry the plantains until a golden brown

Remove from oil and use a paper towel to soak up the excess oil

Enjoy with peanuts
